"Chianti in straw baskets is arguably the most easily recognized product in the world of wines. It is a light, fresh, dry red made in a special manner. The traditional practice to produce Chianti, called the Governo, consists of a slow refermentation of the wine. This second fermentation is effected by adding a 5-10% concentration of must in late December. The result of the Governo is increased glycerin, which enhances the fruity roundness and freshness of the wine. Opici Chianti is a vintage-dated D.O.C.G. dry red which can be enjoyed young, even chilled. " ~Winery Notes
