"This Muscadet Sèvre et Maine has been bottled SUR LIE. It is an ancient bottling technique used in the Nantes region. Muscadet remains on its "lees" (i.e. dead yeasts) and is bottled straight off the vat where it has been fermented. The bottling is not permitted before March 1st, and sur lie Muscadet cannot be released before the third Thursday of March. It might be slightly "prickly", due to the "pearls" of CO2 contained in the wine. This presence of "pétillance" gives Muscadet Sèvre & Maine sur lie its freshness and its liveliness." ~Winery Notes
