Knez Winery makes impressive cool climate, high elevation Chardonnay and Pinot Noir from Anderson Valley's Grand Cru sites Cerise & Demuth. Peter and Heidi Knez purchased Cerise and Demuth vineyards in 2007. Knez farms organically and and is transitioning to Biodynamics. Grapes are picked on the earlier side to preserve the freshness and balance, and undergo natural fermentation for about three weeks with 30-100% whole cluster efore being drained by gravity directly to barrel. The wines are never wracked until bottling, sulfur additions are very low.
