For the Top Minuty Wines everything starts with the vines in a protected environment. We give great importance to enriching the soils using natural manure from goats and sheep that is rich in organic matter. Working the soils allows the micro-organisms present in the earth to breathe, enables better penetration of rain water and facilitates the roots to grow deeply right from the first years of growth in order to procure the necessary nutrients and water in the sub soils. Integrated production is used in the vineyards with no herbicides or pesticides. This environment is bordered by a Protected Woodland Area which guarantees a special high quality ecosystem. Vinifying and Aging : respect for terroirs with precision. Château Minuty is one of the last estates in the Côtes de Provence region to hand harvest entirely in order to ensure perfect quality of the grapes when they arrive at the cellars for crushing. This way the grapes arrive intact and undamaged, go to the destemmer to remove any stalks and green matter, and then are brought to a balanced temperature using an original and highly effective cooling system which is essential during extremely hot periods. In 2009 a new cellar and tank room enabled us to improve further the quality of our vinification. The new set-up has a capacity of 4 000 Hl and is equipped with temperature controlled stainless steel tanks allocated to individual vineyard block fermentations. Fruit expression is a priority over extraction in order to preserve the rich expression of terroir. The bottling chain is entirely automatic and was designed to protect the rosé wines from oxidation and as such to respect their aromatic qualities. The red wines enjoy aging in oak barrels for one year, during which the tannins will slowly soften in the barrel cellar which is both temperature-and-hygrometry controlled. Great care is taken in choosing both the origin and degree of toasting of the barrels in order to obtain a greater range of aromatic expression when blending. A new cellar.
