A brief maceration on the skins is completed before saignée creates the appealing Apothic Rose color. Fermentation temperatures were kept cool to preserve delicate aromas and flavors. When the balance between acidity and residual sugar was achieved, fermentation was arrested by centrifuge. The wine was then kept cool until blending to maintain a perfect balance of acid and fruit flavors." ~ Winery notes
