"Cos Pithos Rosso, biodynamic, Frappato and Nero d Avola, Amphorae. Fermented in concrete amphorae, Pithos Rosso Cos has a stunning nose of violets and raspberry blossom. The mouth is floral, warm and supple, the berry fruit flavours are complemented by soft tannins. The palate is sweet and round, suggestive of raspberries and succulent cherries with the tannins so integrated into the wine, they are barely evident. Some believe finesse in the flatter areas of Sicily is not possible with fine wine being reserved for the slopes of Etna. But Cos have always managed to produce wines that defy the hot climate and show that natural production always leads to freshness and drinkability." ~ Winery notes

The taste of Africa jumps out at you not just from the various architectural ruins but also more importantly from the vegetation: olive, carob and almond trees and vines abound. The climate as well recalls Africa with its red, ochre and yellow tones.
Three friends founded Azienda Agricola COS, in 1980: Giambattista Cilia, Cirino Strano and Giusto Occhipinti. The acronym of their last names is where the name for the winery – COS – comes from.

For over 3000 years, the Earth has had grape vines. This is an extraordinary gift that we have been given and that we have received with humility and work with in our own way. We are always looking to work as artists in terms of our concept of a wine. This has enabled us to undertake a very difficult path but one that we are fully satisfied with and that we intend to pursue wholeheartedly. For the past 30 years, we have been creating our history and putting it into every glass of our wine, our story, the story of our ancestral lands.
