THE WINE
Produced from grapes grown in the Santa Margarita Vineyard in the cool southwestern corner of the Paso Robles viticultural area, this wine combines the balanced Talley Vineyards’ house style with the soft approachability typical of the Paso Robles region.

The 2015 Bishop’s Peak Cabernet Sauvignon is deep carmine in color. Expressive aromas of plum and pepper are bolstered by meaty notes of pork belly and smoked ribs. The palate displays beautiful, subdued tannins with notes of plum, raspberry, and root beer. Enjoy this wine with Santa Maria style barbeque or smoked brisket.

VINEYARD NOTES
The 2015 vintage marked the fourth year of the California drought. Weather during May flowering was unsettled which led to poor pollination and reduced cluster weights. Harvest began early in the Paso Robles area and the low production—a result of both the ongoing drought and smaller clusters—yielded wines with dark color and concentrated flavors.
