Displaying a beautiful mulberry hue, the 2016 Bishop’s Peak Cabernet Sauvignon offers aromas of cedar, black licorice, fennel, and a hint of bubblegum. The palate is lush, exuding notes of red plum and cassis that continue long onto the finish. Try pairing this Cabernet Sauvignon with a juicy bone marrow burger or the classic dish of the region, Santa Maria style barbeque.

Vineyard Notes
After four years of severe drought, El Niño conditions brought the most rainfall to the region since 2011 with just over 13 inches reported in the city of Paso Robles, about an inch less than the long term average. Weather was good during bloom time and the vines set a moderate crop, though berry size was reduced by hot weather in the early summer. Typical of the region, temperatures fluctuated during the final ripening period with several heat spikes recorded in August and September. While most of the Cabernet Sauvignon in the Paso Robles area was harvested by the end of September, grapes from the cooler Santa Margarita region were harvested 2-3 weeks later, which is typical.

Bishop's Peak, an iconic local landmark, was chosen as the symbol for the brand, showcasing wines that are produced in small lots from vineyard sites in the Arroyo Grande Valley, Edna Valley, and Paso Robles Viticultural Areas as well as the Nipomo area south of Arroyo Grande. Some of these sites are owned by the Talley family while others are owned by growers who share the family's commitment to quality. The wines balance production and quality to deliver exceptional value, while maintaining the same attention to detail that is the hallmark of Talley Vineyards.
