"The grapes for this wine were harvested at night and in the early morning to keep the fruit cool. The juice was membrane drained and pressed, then kept cool and allowed to settle before racking to upright stainless steel tanks and oak barrels. Fermentation occurred for approximately two weeks at temperatures ranging between 57°F and 59°F, and at 63°F for the last four days. To enhance the texture of the wine, the lees were stirred in some of the tanks, while the barrels were stirred every three to four weeks for three months. All of the wine underwent malolactic fermentation to add depth and highlight the clover honey and caramel notes in this wine." ~ Winery notes
