Dark red fruit melds into sweet herbs, spices and licorice in this generous, plush Pinot. The wine finds its focus and minerality in the rich, creamy finish. The Chimera is a blend of fruit from nine different vineyards, most of them from the Sonoma Coast and Russian River. This is about as good as California Pinot gets in the $30 price range. Anticipated maturity: 2012-2016.

Sean Capiaux is probably best known for the stunning wines he makes at O-Shaughnessy on Howell Mountain. The Pinots he makes for his own label are equally worthy of attention. Capiaux crafts bold, juicy Pinots long on personality." ~ AG

"(includes a lot of declassified grapes): Medium red. Red berries and exotic spices on the nose. Supple and fruit-driven, with spice and loam notes adding complexity. Nicely pure pinot with good acidity and cut. Capiaux uses very little oak for his basic pinot bottling. He's now big on 350-liter barrels but normally breaks them in on his single-vineyard wines."

Sean Capiaux founded Capiaux Cellars in 1994, Capiaux cellars is dedicated to producing single vineyard bottlings of Pinot Noir. The philosophy is to produce wines that express the unique location from which they came, a sense of place or distinctive quality that sets them apart. Therefore, only high quality, low yielding, select clonal grapes are used, from unique viticultural areas.

The winemaking style is a blend of classic and contemporary, utilizing cutting edge fermentation equipment paired with natural hands on winemaking, our emphasis is on balance All the wines are naturally fermented and unfined and unfiltered to preserve their innate flavors and aromas. Minimal amounts of new oak are used, usually 33%.
