90% Gamay, 10% Mondeuse. Grapes are hand harvested and sorted both in the vineyard and again at the winery. Both varietals get 24 hours of cold maceration with the skins, followed by a direct press. Cool alcoholic fermentation for 15 days. Full malolactic fermentation. Aged 3 months on the fine lees in concrete tanks.
