“Paradou” in the old Provençal language, the “langue d’oc,” does not mean “paradise” but refers to the old watermills that once dotted the landscape. Le Paradou is indeed a former watermill owned by the Chaudière Family and the guest House of Château Pesquié. Frédéric & Alexandre Chaudière, the new generation of the family have selected great Viognier plots at the foot of the Mount Ventoux and at the foot of the Cévennes (South East of the Central Mountain, the « Massif
Central ») between Montpellier and Nîmes to make a very fresh and elegant Le Paradou white.
Golden color with silvery glints, clear and bright. Nose of white flowers, white fruits (peach). In mouth, very fresh and balanced, with citrus aromas (lemon), white fruits and a great minerality.
A favorite as an aperitif, Le Paradou Viognier is one of those rare wines that can be paired with asparagus. Very elegant with grilled fishes, fried squid, scallops, it emphasizes dishes with cheese such as Parmiggiano Risotto and goes well with goat cheeses. For desserts, with apricot pie or even strawberry soups. " Winery notes
