Organic (certified), 100% Chenin Blanc, Oldest vines planted in the 1910s, youngest planted in 1995. Several northeast and southeast-facing parcels on the left bank of Layon river, silt and gray schist soil. Whole bunches pressed directly, separation of free-run juice, light decanting, indigenous yeast fermentation, partial malos (about 50%). Aged for about 8 months on lees in older 400L and 500L barrels (40%), in 20 hL puncheons (40%), and buried tanks lined with sandstone tiles (20%). bThese vines grow on gentle slopes near the village of Saint Lambert du Lattay.
