"Handpicked during the coolest hours of the day, the grapes for our 2011 Pinot Noir were delivered to the winery in half-ton picking bins. The clusters were then sorted and destemmed using state-of-the-art equipment before being sent to the fermentor as whole berries. We used cap management techniques, including hand punch-downs and daily rack-and-returns to coax the elegant Pinot Noir flavors from the grapes. Following fermentation, the wine was drained and the cap was pressed lightly to extract the most flavorful juice from just beneath the skin’s surface. The wine was barreled in French oak, 33 percent of which was new, for 10 months before blending." ~ Winery notes
