"Our Chardonnay grapes were whole cluster pressed to ensure a rich yield of apple flavors and to create a textured mouthfeel. The juice was kept cold and racked, leaving only the heaviest lees. We used Montrachet, CY3079, D254 and some natural yeast to initiate fermentation. A portion of this wine was fermented in barrels at an ambient cellar temperature of roughly 65°F. Following primary fermentation, this wine completed malolactic fermentation and a portion was aged sur lie, resulting in a plush texture and deep, layered flavors that express the terroir of the Russian River Valley." ~ Winery notes
