"The grapes for our Sauvignon Blanc were gently pressed before being racked clean or centrifuged to remove all solids to amplify the fruit and protect the delicate aromas and flavors. A small portion of the wine was left with some lees and stirred on a weekly basis to build body and viscosity. Some lots were aged on French oak for a subtle touch of caramel and toasted oak to support the ripe fruit characteristics." ~ Winery notes
