A great cooking wine
"So, under 10 dollars for 1.5 liters. Best of all, this is a very nice, drinkable wine. I buy it, however, mainly to use in cooking. You can make a wonderful coq au vin by dredging the chicken pieces in flour, brown the chicken in a little olive oil, add your Gallo Hearty Burgundy to cover, and cook for about an hour. You will not be disappointed. I have been using this wine for cooking for 40 years and it has never disappointed.Adding this to my review, as I just cooked this with a 2 year old bottle of Gallo HB: I forgot a step when I first reviewed. After browning the chicken, I remove it to a bowl, add 2 ounces of Cognac to the pan and light it after if boils up a bit. Whoosh!! Watch your hair doesn't catch on fire!.Add the wine and scrape the bottom of the pan with a flat wooden spatula until all the flour residue that stuck on the bottom comes off. Then add a bay leaf and some basil and parsley. Add back the chicken, cover and simmer on low for 50 minutes or so. While it's cooking, you saute some small whole onions over a very low flame in olive oil for at least the 50 minutes, turning occasionally. These will get incredibly delicious. Add them when ready to serve the chicken."
