"In our efforts to remain local with our roots, what better way to herald "apple country" than to produce an Apple Mead (cyser, for those curious about the technical term). This seasonal mead begins life with the same amazing raw NY honey that is used to craft Heritage. We then had Indian Ladder Farms press a custom blend of apples for us exclusively for this mead. We have decided to leave it cloudy because when you clarify it, you remove much of the character that is brought to the mead from the apples themselves. The result is an Apple Mead that is crisp and fresh tasting with a harmonious balance of apples and honey." ~ Meadery notes

All of our mead is borne of the most local and raw ingredients.
It is the epitome of locavore.
Our honey comes from the rolling hills of Schoharie County. Never heated, only warmed, to ensure that the volatile aromatics are not driven off. As raw as nature intended.
Even our water is local, taken from a mineral rich source hundreds of feet below the surface.
Every small detail cumulatively combines to allow us to craft our award-winning Mead.
