The process of cultivating wild yeast is time-consuming and delicate, but the rewards are a mead that tastes unlike anything available. The flavor reflects the delicate process of creation. It has an initial smooth and slightly sweet raw honey flavor. At 12 ABV there is a hint of alcohol to compliment and enhance the honey which gives way to an amazing array of fruity and floral essences imparted by the yeasts alone. We have used a more subtle oak for Feral, to provide a subtle and light contrast to the smooth honey. " ~ Distillery notes
About Helderberg Meadworks
OUR MEAD
All of our mead is borne of the most local and raw ingredients.
It is the epitome of locavore.
Our honey comes from the rolling hills of Schoharie County. Never heated, only warmed, to ensure that the volatile aromatics are not driven off. As raw as nature intended.
Even our water is local, taken from a mineral rich source hundreds of feet below the surface.
Every small detail cumulatively combines to allow us to craft our award-winning Mead.

"It wasn't bad, but it wasn't delicious. I'd recommend trying it though and the bottle itself is pretty neat."
