Food pairing
"La Bourgeoise" is a delicious accompaniment to fish dishes, such as John Dory roasted with fennel, and lightly spiced meals.
Try a well-aged bottle of "La Bourgeoise" with farm hen in truffle sauce.

Tasting notes
This wine with its gun-flint aromas and spicy bouquet is subtly wooded, rich in fruit, full-bodied, well balanced, and very reminiscent of the Sauvignon flower and grape. The richness and intensity of the flavor linger long and harmoniously on the palate. This prestigious selection has excellent bottle maturation potential and will continue to evolve for 10 to 12 years.

Vinification
A portion of the wine is fermented in thermoregulated stainless steel tanks (70%) and the other portion in French oak barrels from the famous Tronçais forest (30%).
Patiently aged for 7 - 8 months on its fine lees in the oak barrel with periodic hand stirring of the lees ("batonnage"), "La Bourgeoise" is only bottled after achieving one year of tank and barrel maturation.

Wine
"La Bourgeoise" is made from old Sauvignon vines growing on flinty slopes first worked by the monks of Saint Satur.
Like its name, the elder vines of the Domaine Henri Bourgeois offer a strong character with aromatic notes as various as its personality is singular.

Robert

A complex wine, but expensive

"We are having a little experiment to see if we can taste the qualities that raise the price of a white wine above 28 dollars. The wine is creamy, nuanced, flinty, and has good structure. Peach, nectarine, other white stone fruits. Lingers on the palate. Well, maybe thats why it costs so much. We may buy another bottle in future. Intriguing that the notes suggest it will develop in the bottle for another 10 to 12 years. Not sure how that works."
