"In La Cueille, one of seven high-altitude hamlets surrounding the historic medieval town of Ponsin, Patrick and Catherine Bottex are farming the limestone slopes above the Ain River. They have been working five hectares of land since 1991 and produce only a small quantity of their beautiful, intriguing sparkling wine. As a former part of the Duchy of Burgundy, it stands to reason that several Burgundian grape varietals have found a home herenot the least of which is Gamay. The Bottexs blend consists of ninety percent Gamay and ten percent of the native Poulsard. They bottle this low-alcohol wine using the methode ancestrale, a rare technique that experts believe predates the methode champenoise. The wine first goes through a primary fermentation in cuve, but is then bottled before all of the residual sugar has converted to alcohol. After going through a secondary fermentation in the bottle for at least two months, the wine is ready Champagnes dosage is not permitted! The resulting wine is delightfully refreshing with bright fruit, a beautiful rose hue, and a touch of sweetness.

Perfect Spring Wine

"Nothing says spring like a glass of this sparkling Gamay. This off dry bubbly with a slightly tart cherry flavor has you going for another sip immediately. Strawberry, cherry and other dark fruits mix together with a slight creaminess that can compliment any light appetizer, preferably enjoyed out on the deck. This will undoubtedly change the minds of anyone who has been hesitant about sparkling Rose and reassure those who know they do nothing but enhance a beautiful day."

"We experienced this superb sparkling wine with dessert at Le Bernardin in NYC as one of eight outstanding wines paired and served with Chef Eric Ripert's Tasting Menu. We thoroughly enjoyed it and ordered a case at an amazing price of $18.93 per bottle from Empire Wine. This beautiful end to a 3 Star Michelin Dinner was paired with Grapefruit Sorbet, Blood Orange-Quince Granite. Cameron, the Sommelier who guided us through the wines, gave a unique perspective on this superb wine. We will be serving this at Thanksgiving this year with dessert and loving every glass!"

"You don't have to pretend to like this stuff. Only the snobbiest of wine and champagne drinkers would be offended by something so simply pleasurable to drink as this is. My only problem is that I have to get from afar. If they sold it locally, I'd serve even more of it."

Disappointing Sparkling Wine

"I found this wine to be disappointing based on it's rating. While I thought this would be similar to a champagne style of wine (such as a cremant from Alsace) instead I found it a bit flat sparkly but not the depth of flavor I was hoping for."
