The 2021 Phoenix Cabernet Sauvignon spent 15 days on skins with twice daily pumpers and matured in a combination of vessels for 12 months (65% seasoned French oak, 5% new French oak, 30% in stainless steel). This is an unashamedly bright, fruit- driven Cabernet Sauvignon that rests on a very fine rachis of tannin on the mid-palate. It is supple and fine and oh so fresh. It is modern, juicy, vibrant and crunchy, even, reminiscent of good Loire Chinon. It is also a very good value.

On the nose, a complex bouquet emerges, full of black fruits and varietal herbs: evocative blood plum, blackcurrant, anise and fresh thyme with a glimpse of purple flowers. The wine is medium-bodied in structure with a juicy core of ripe fruit flavors. Integrated French oak notes complement the seamless tannins giving rise to a long satisfying finish. ~winery notes

Penley - also known as Penley Estate - is located in the heart of one of Australia’s greatest Cabernet wine regions: Coonawarra. Established in 1988 by the direct descendants of the pioneering Penfold and Tolley winemaking families, Coonawarra’s famed Terra Rossa soils were selected for their ability to produce terroir- driven wines of true regional character. Penley is now widely regarded as one of the region’s leading producers, and is committed to reducing its environmental footprint, from moving toward organic vineyard practices, through to their selection of lightweight glass for bottles. In 2023, the winery and vineyards were certified sustainable by Sustainable Winegrowing Australia.
About Penley Estate
Our wine-making history dates back to 1844, but it really began with a red sports car in 1945.

It was a collision of hearts and minds, a collision that had been 100 years in the making – refined and distilled from two pioneering winemaking families.

When Reginald Lester Tolley rolled up to a function in his red sports car, Judith Anne Penfold Hyland was suitably impressed by the car and rather taken by the man behind the wheel. Sparks flew, romance blossomed and Penley was conceived (as a business name) in 1947 after Reginald and Judith married.

However, it wasn't until 1988 that the Penley name came to life, that it finally bore fruit, so to speak. That's when we (the children of Reginald and Judith) decided to create our own wines – put our label on tradition.
