Certified Organic. 100% Tempranillo from 30 year old vines located between the Jucar and Cabriel Rivers at 700 meters on limestone and clay soils. Here the vineyards experience a push-pull between the cool, humid Poniente Wind from the Atlantic and the heat of the Levant Wind that comes from North Africa. The result is a large diurnal temperature fluctuation that favors slow ripening and perfect formation of the phenolics. The grapes are hand-harvested, fermented with native yeast in temperature controlled stainless steel for 15 day, followed by aging for 6 months in cement tanks before bottling. The finished wine is supple and smooth with robust notes of plums, black raspberries and earthy spice.
