59% Chardonnay, 27% Pinot Noir and 14% Pinot Meunier
Whole-bunch pressed to limited pressure, and to give a low yield of 62% volume to weight. A natural cold settling takes places without the use of enzymes. Fermentation at a moderate temperature of 16-18 C in stainless steel using natural yeast. Malolactic fermentation is carried out. Dosage is 9 g/l.
A light golden color with a fine, persistent mousse. Citrus fruit aromas with hints of melon and honey. Chardonnay dominance brings finesse, along with crisp freshness. The Pinots add depth and character leading to a beautifully balanced finish. Will age gracefully over time as the Chardonnay matures. - Winemaker Notes
Ridgeview was founded in South Sussex, England by Michael Roberts in 1994. The estate is located 40 miles south of London and 80 miles to the north of Champagne. Sharing a similar soil type, Ridgeview was one of the first estates in the region to start producing sparkling wine using the traditional Champagne method. Over the past 20 years, Ridgeview has become the eminent influencer for the rise of the English sparkling wine.
