The grapes for the Chianti Classico are selected and picked by hand. The must undergoes maceration over the grape skins for 12-14 days. Following the alcoholic and malolactic fermentation, the wine is then aged in Slavonian or French oak barrels for a period of 6-10 months and refined further in the bottle.
Lively ruby red, intense and persistent with hints of wild berries that combine well wit the aromas released by the wood of the barrels. Savory and full bodied, it highlights the exceptional persistence of the bouquet.
Love and passion for the Tuscan land are handed on from Italo to his sons Sergio and Fabio and to his daughter Sandra. In 1985, Sergio, Italo's youngest son, became personally responsible for the worldwide distribution network and in 1989, with his wife Daniela at his side, was appointed Company President.
As part of Sergio's long term business strategy and of his determination to achieve quality, he consolidates and developes , together with the collaboration of his sister Sandra, the paternal company which becomes popular worldwide, gaining many prizes and recognitions for his wines. Sergio's elder brother Fabio, which in the meantime became architect, follows personally the restoration works of the Fizzano village and of the new wine cellar.
Today Sergio and Daniela are making use of their children's help: in fact Andrea, which is soon graduating from college, is collaborating with his father during his trips abroad, while Giulia is already active at her mather's side in taking care of the hospitality branch of the company business.
The company estate now extends to more than 600 hectares with, in total, more than 200 used as vineyards and 80 as olive groves, subdivided across the company's six estates: Le Macìe, Sant'Alfonso, Fizzano e le Tavolelle in the Chianti Classico zone, in addition to the recently purchased Campomaccione and Casamaria in the Morellino di Scansano zone.
The development of Rocca delle Macìe as a commercial venture has been characterized from the outset by, on the one hand, a relationship of reciprocal respect with the terroir, and, on the other, by a consistent commitment towards improving product quality through innovation in the cellars.
The successes that Rocca delle Macìe has achieved as a winery are based, first and foremost, on the painstaking approach we take in the vineyards. This quality-oriented approach dictates low yields per hectare, green harvest and leaf removal being performed during the summer months and a manual harvest directed by expert winegrowers. Our team of winemakers and cellar persons follow up the hard work done in the vineyards by adopting an equally meticulous attitude in the cellars, which have been expanded and modernized over the years and now feature state-of-the-art fermentation equipment to ensure precise control of the must, as well as modern maturation vessels to ensure optimum ageing.
Indeed, as part of the ongoing endeavor to manage production and interpret consumer requirements as effectively as possible, in 2002 Rocca delle Macìe commissioned the construction of a new cellar dedicated to the ageing of a special selection of red wines. The cutting-edge maturation area, located on the Le Tavolelle estate, has the capacity to house almost one thousand barriques.
