"The 2015 Assyrtiko is unoaked and comes in at 12.9% alcohol. The diversity of styles on the island can sometimes be fascinating. Comparing this relatively fruity and clean (if still very tense and gripping) Assyrtiko with, say, the stony Canava Roussos in this report is an interesting contrast. The vintages are different, however, and this has the advantage of exuberant youth, the young fruit being simply delicious just now, but the structure being far more interesting. This is impressively balanced, respectably concentrated and beautifully structured. It is perhaps the best regular Assyrtiko that I have seen from Santo Wines."
" Characteristics: Shiny and yellowish, make a unique statement with its varietal character, which embraces white flowers, citrus fruits aromas and intense minerality. Vivid, with full, well balanced body and distinctive long after taste.
About the Winery: Today, we are very proud because in the most modern winery facility, where the technological perfection is harmonized with the uniqueness of our island, we create our famous wines. Our winery, which operates since 1992, is sited on the edge of Caldera, in the middle of Santorini vineyard. It is of 5000 tons capacity.
Santo Wines, being environmentally conscious, has built the winery in 5 different levels so that the building is in harmony with the surrounding environment and the vineyards that are spreading out in different ground levels forming the traditional “pezoules” From a technological point of view, the winery is built in different levels so that during the winemaking process the must is transferred by the gravity phenomenon with the minimum use of pumps, technique that protects and promotes the quality of our wines.

Santo Wines was founded in 1947 as the Union of Santorini Cooperatives and represented all Santorini wineries. Today, Santo Wines is the biggest producer on the island. The new, state-of-the-art winery was built in 1992 and is situated on the edge of the Caldera in the village of Pyrgos.
Santo Wines, representing all the producers on the island, is committed to producing authentic Santorini wines of superior quality while respecting the Santorini traditional vinification techniques and protecting the precious Santorini vineyards. They developed their own Research and Development Department to regularly launch special projects to evaluate methods to improve cultivation techniques, vinification processes and varietal quality.
