"The 2016 Assyrtiko is unoaked and comes in at 13.5% alcohol. Clean, fresh, beautifully balanced and just a little earthy, this has good concentration, length on the finish and a serious feel. There's just a hint of lemon, but that will pull into the whole well. It's a wine with the solidity to hold up to food or the freshness to enjoy on its own. It will probably do a bit better with food. A very good value, it should hold nicely for several years, too, maybe more."
ABOUT THE WINE
100% Assyrtiko grown in volcanic soils and aged in stainless. Vines grown on their own rootstock and are trained in the traditional basket style to protect from wind and conserve water.
This wine is a classic benchmark of the variety and its homeland. A vibrant aromatic cocktail of sea-breeze freshness and citrus fruits with honeyed undertones. Bonedry, brightly acidic with a textural mineral smokiness and a food-begging finish.

Today, we are very proud because in the most modern winery facility, where the technological perfection is harmonized with the uniqueness of our island, we create our famous wines. Our winery, which operates since 1992, is sited on the edge of Caldera, in the middle of Santorini vineyard. It is of 5000 tons capacity.
Santo Wines, being environmentally conscious, has built the winery in 5 different levels so that the building is in harmony with the surrounding environment and the vineyards that are spreading out in different ground levels forming the traditional “pezoules” From a technological point of view, the winery is built in different levels so that during the winemaking process the must is transferred by the gravity phenomenon with the minimum use of pumps, technique that protects and promotes the quality of our wines.

Santo Wines was founded in 1947 as the Union of Santorini Cooperatives and represented all Santorini wineries. Today, Santo Wines is the biggest producer on the island. The new, state-of-the-art winery was built in 1992 and is situated on the edge of the Caldera in the village of Pyrgos.
Santo Wines, representing all the producers on the island, is committed to producing authentic Santorini wines of superior quality while respecting the Santorini traditional vinification techniques and protecting the precious Santorini vineyards. They developed their own Research and Development Department to regularly launch special projects to evaluate methods to improve cultivation techniques, vinification processes and varietal quality.
