"From a prominent cooperative winery on sunny Santorini comes this inviting, zippy wine with bright lemon rind and floral aromas. It was vinified in stainless steel and sat for 14 months on its lees, giving the palate ripe, juicy tropical fruit flavors balanced by a flinty backbone. Pair it with salads, seafood and any and all grilled proteins."

The Wine
100 Assyrtiko grown in volcanic soils and aged in stainless. Vines grown on their own rootstock and are trained in the traditional basket style to protect from wind and conserve water.

Characteristics
This wine is a classic benchmark of the variety and its homeland. A vibrant aromatic cocktail of sea-breeze freshness and citrus fruits with honeyed undertones. Bonedry, brightly acidic with a textural mineral smokiness and a food-begging finish.

The Winery
Today, we are very proud because in the most modern winery facility, where the technological perfection is harmonized with the uniqueness of our island, we create our famous wines. Our winery, which operates since 1992, is sited on the edge of Caldera, in the middle of Santorini vineyard. It is of 5000 tons capacity.

Santo Wines, being environmentally conscious, has built the winery in 5 different levels so that the building is in harmony with the surrounding environment and the vineyards that are spreading out in different ground levels forming the traditional pezoules From a technological point of view, the winery is built in different levels so that during the winemaking process the must is transferred by the gravity phenomenon with the minimum use of pumps, technique that protects and promotes the quality of our wines.
