Vibrant, terroir driven bush vine Pinotage from decomposed granite and sandy soils that were dry farmed. Open top concrete fermenter (a.k.a Kuip) as wholebunches and then slightly stomped on by Bernhards (clean!) bare feet untill there was enough juice. No additions or alterations were made throughout, just the pure healthy grapes extracting themselves over a 12 day period with minimal intervention during spontaneous fermentation. Then pressed off into a stainless steel tank for spontaneous malo fermentation where it then also aged in for 7 months before bottling. Bottled straight, unfiltered and unfined. No oak or barrel ageing involved. Uncomplicated and straight down to raw leaner Pinotage from a unique site and some special old vines.
The wines are made with a natural and more traditional old world vinification approach to embrace the vineyards own character and to help keep terroir part of the final wine with a sense of purity. The region of Sinai Hill is located between 3 to 5 km from the South Atlantic Ocean (False Bay) in the farthest reach to the South East of Stellenbosch. Making them the closest vineyards towards the cooling effects of the Ocean.
