This cuvee is made by Jean-Baptiste Geoffroy, from grapes grown by his producer colleagues in this nearby village. Duc de Romet is labeled as ND (Négociant-Distributeur), not RM as these growers do not own enough land to vinify the wines on their own.
JB acts as the chef de cave for this project; he tastes, selects the cuvee, supervises the blend, and chooses the dosage after a series of trials. This is a well-balanced Blanc de Noirs (75% Pinot Meunier and 25% Pinot Noir) with enough lift and acidity to act as an aperitif, but strong fruit character and depth, allowing it to be paired with more main courses. Paired with fried chicken, it reaches the apex of deliciousness.
